Spiced cauliflower soup with garlic toast

How to Make:

  1. Trim stalk from cauliflower and roughly chop. Cut cauliflower into florets. Place cauliflower stalk and florets, onion, garlic, stock, spice blend and 2 1/2 cups water in a large saucepan over medium-high heat. Cover. Bring to a simmer. Simmer for 12 to 15 minutes or until cauliflower is very soft. Remove from heat. Stand for 5 minutes.
  2. Meanwhile, make Garlic Toast: Preheat grill on high. Place baguette on a baking tray. Grill for 1 minute each side or until golden. Drizzle 1 side of each toast with oil and rub with cut side of garlic. Season with salt.
  3. Using a stick blender, blend soup until smooth. Season with salt and pepper. Stir in yoghurt. Ladle soup into serving bowls. Top with coriander, sprinkle with extra spice blend and drizzle with extra oil. Serve with garlic toast.

  • 1 1/2 teaspoons harissa Middle Eastern spice blend, plus extra to serve
  • 3/4 cup Tamar Valley Greek Style Yoghurt
  • Extra virgin olive oil, to serve
  • Fresh coriander leaves, to serve
