Recipe: Chicken, mozzarella and chilli crisp pizza
How to Make:
- Preheat oven to 220°C.
- Remove the bones from the chicken and discard skin. Cut the meat into 1cm pieces.
- Place the Lebanese bread on 2 large pizza or baking trays. Spread the pizza sauce evenly over the bread and sprinkle each with 1/4 of the mozzarella. Scatter the chicken over the mozzarella and then sprinkle with the green shallots.
- Place the remaining mozzarella in a small bowl. Add the coriander, chillies, garlic, salt and pepper, and mix well. Sprinkle evenly over the pizzas.
- Bake the pizzas in preheated oven, swapping the trays halfway through cooking, for 14 minutes or until golden. Serve immediately.

- 1/4 barbecued chicken, breast section only
- 2 Lebanese bread (26cm diameter)
- 1 140g container pizza sauce (Leggo's brand)
- 60g shredded light mozzarella
- 8 large green shallots, trimmed, chopped
- 1/3 cup fresh coriander leaves
- 2-3 small fresh red chillies, deseeded, finely chopped
- 1 garlic clove, finely chopped
- Salt & ground black pepper
