How to Make:

  1. Preheat the oven to 250°C. Place 2 trays in the oven to heat. Place each pizza base on a sheet of baking paper.
  2. Combine the garlic and oil, then brush over the pizza bases. Divide ricotta between pizza bases and season. Using the baking paper, transfer the bases onto the hot oven trays, then bake for
  3. 10 minutes or until bases are crisp. Meanwhile, cut avocado into small cubes and toss in lemon juice. Remove pizza bases from oven and scatter with avocado, semi-dried tomatoes and oregano. Dot over pesto and serve.

  • 2 garlic cloves, crushed
  • 1/3 cup (80ml) olive oil
  • 250g ricotta, drained
  • 1 large avocado
  • Juice of 1 lemon
  • 200g semi-dried tomatoes
  • 2 tbs oregano leaves
  • 1/3 cup (90g) good-quality basil pesto
