Recipe: Sweet potato and ham scruffin bites

How to Make:
- Preheat oven to 200C. Grease a 12-hole (1/3-cup capacity) muffin pan.
- Combine flour, baking powder and sugar in a large bowl. Make a well. Whisk sweet potato, oil, milk and egg in a separate bowl. Add potato mixture to flour mixture. Stir to combine. Turn out onto a floured surface. Gently press out to form a 25cm x 35cm (about 1cm-thick) rectangle.
- Top dough with ham. Sprinkle with tasty cheese. Working from 1 long side, roll up dough to enclose filling. Cut into 12 slices. Place one slice, cut-side up, in each prepared hole. Top with tomato and fetta. Spray with oil. Bake for 20 minutes or until lightly golden. Cool in pan for 2 minutes.
- Sprinkle with extra fetta and basil. Serve warm or at room temperature.

- 6 cherry tomatoes, quartered
- 50g fetta, crumbled, plus extra to serve
- Small fresh basil leaves, to serve
