How to Make:

  1. Preheat oven to 180C. Grease and line a 30cm x 20cm lamington pan with baking paper.
  2. Use an electric mixer to beat the butter, brown sugar and vanilla in a large bowl until pale and creamy. Add egg and beat until well combined.
  3. Sift the flour and mixed spice into a separate bowl. Combine sour cream and milk in a small bowl. Add the flour mixture and sour cream mixture to the egg mixture in alternating batches, finishing with flour mixture. Pour into prepared pan and smooth the surface. Arrange nectarine on top. Sprinkle with almonds, cinnamon and caster sugar.
  4. Bake for 35-40 mins or until a skewer inserted into the centre comes out clean. Set aside in the pan for 5 mins to cool slightly before transferring to a wire rack to cool completely. Cut into pieces.

  • 1 Coles Australian Free Range Egg
  • 1 cup (150g) self-raising flour
  • 1 teaspoon mixed spice
  • 100ml sour cream
  • 1 tablespoon milk
  • 2 yellow nectarines, thinly sliced
  • Flaked almonds, to sprinkle
  • Ground cinnamon, to sprinkle
  • Caster sugar, to sprinkle
