How to Make:

  1. To make the banana bread, mix caster sugar and self-raising flour in a bowl.
  2. Whisk buttermilk, butter, eggs and 2 mashed large ripe bananas in a medium bowl. Add to flour mixture and stir to combine.
  3. Stir in frozen blackberries and lime rind.
  4. Pour the banana mixture into a greased and lined 10cm x 22cm loaf pan. Smooth the surface. Bake at 180C for 1 hour or until a skewer inserted in the centre comes out clean. Cool in the pan for 5 mins, then turn onto a wire rack to cool completely.
  5. To make blackberry frosting, place frozen blackberries and caster sugar in a saucepan over low heat. Cook, stirring, for 5 mins or until blackberries start to collapse.
  6. Cook for a further 5 mins or until mixture thickens slightly. Strain through a fine sieve. Use an electric mixer to beat butter in a bowl until very pale. Gradually add icing sugar mixture, beating well after each addition.
  7. Reserve 2 tablespoons of blackberry puree. Add remaining puree to butter mixture. Spread over cooled banana bread. Drizzle with reserved puree.
