How to Make:

  1. Preheat oven to 220C. Use your hands to mix the mince, egg, breadcrumbs, garlic, coriander, cumin and one-third of the feta in a bowl until well combined. Season.
  2. Heat the oil in an ovenproof heavy-based non-stick frying pan over medium-high heat. Remove from heat. Add mince mixture. Use a spatula to press to cover the base. Smooth the surface. Place over medium heat. Spread lamb mixture with the tomato paste. Top with the mozzarella, tomato and remaining feta.
  3. Bake for 10-15 minutes or until cooked through and golden. Serve with spinach and coriander leaves.

  • 500g lamb mince
  • 2 eggs, lightly whisked
  • 25g (1/4 cup) dried (packaged) breadcrumbs
  • 3 garlic cloves, crushed
  • 2 tablespoons chopped fresh coriander
  • 2 teaspoons ground cumin
  • 75g Danish feta, crumbled
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons tomato paste
  • 100g (3/4 cup) finely grated mozzarella
  • 125g cherry tomatoes, halved
  • 60g baby spinach leaves
  • Fresh coriander leaves, to serve
