How to Make:

  1. Process chilli, garlic, coriander, sugar, fish sauce and lemon juice in a food processor until smooth. Makes 180ml.
  2. Spread rock salt or ice over a platter and top with oysters. Serve with lemon wedges and nam jim dressing.
