Recipe: Oysters with nam jim dressing

How to Make:
- Process chilli, garlic, coriander, sugar, fish sauce and lemon juice in a food processor until smooth. Makes 180ml.
- Spread rock salt or ice over a platter and top with oysters. Serve with lemon wedges and nam jim dressing.

- 2 coriander roots, washed, roughly chopped
- 1/2 teaspoon caster sugar
- 80ml (1/3 cup) fish sauce
- 80ml (1/3 cup) lemon juice
- 24 freshly shucked oysters
- Rock salt or ice, to serve
- Lemon wedges, to serve
