How to Make:

  1. Heat the oil in a medium non-stick frying pan over medium heat. Add the onion, pine nuts and garlic, and cook, stirring, for 2-3 minutes or until the onion is soft and the pine nuts are golden. Remove from heat.
  2. Add the balsamic vinegar, parsley and chives to the pan. Stir until well combined. Taste and season with salt and pepper.
  3. To serve, spread the rock salt over a serving plate and place the oysters on top. Spoon the pine nut dressing over the oysters and serve immediately.

  • 2 tablespoons extra virgin olive oil
  • 1/2 small brown onion, finely chopped
  • 2 tablespoons pine nuts, roughly chopped
  • 1 garlic clove, crushed
  • 1 1/2 tablespoons balsamic vinegar
  • 1 tablespoon chopped fresh continental parsley
  • 2 teaspoons chopped fresh chives
  • Salt & freshly ground black pepper
  • Rock salt, to serve
  • 12 oysters in half shell, chilled
