How to Make:

  1. Preheat oven to 220C/200C fan-forced. Grease a 4cm-deep, 25cm (base) heavy-based, ovenproof pan.
  2. Place flour, yeast and sugar in a bowl. Season with salt and pepper. Make a well. Add oil and ½ cup warm water to well. Using a butter knife, stir until a soft, sticky dough forms. Turn out onto a lightly floured surface. Knead for 5 minutes or until dough is smooth. Place dough in prepared pan. Set aside, covered with a clean tea towel, for 10 minutes.
  3. Press dough across base of pan to cover. Leaving a 2cm border, spread salsa over dough. Top with chorizo, onion, beans and capsicum. Sprinkle with mozzarella. Bake for 20 minutes or until mozzarella is golden and melted.
  4. Meanwhile, combine avocado, tomato, lime juice and coriander. Season with salt and pepper.
  5. Top pizza with avocado mixture. Serve.

  • 7g sachet dried yeast
  • 1/4 teaspoon sugar
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup medium chunky salsa
  • 1 chorizo, cut into 5mm thick slices
  • 1/2 red onion, thinly sliced
  • 1/2 x 425g can black beans, drained, rinsed
  • 1/2 x 175g packet vine sweet mini baby capsicum, thinly sliced into rounds
  • 2/3 cup grated mozzarella
  • 1/2 avocado, diced
  • 150g cherry tomatoes, quartered
  • 1 tablespoon lime juice
  • 2 tablespoons fresh coriander leaves
