How to Make:

  1. Use pastry sheet to line a 23cm pan. Refrigerate for 30 minutes.
  2. Preheat oven to 190°C.
  3. Line the pastry with non-stick baking paper and fill with rice or pastry weights. Bake for 10 minutes. Remove paper and weights and return to the oven for 5 minutes until dry and crisp.
  4. Heat oil in a large pan. Add onions and cook over low heat for 10 minutes until soft, then add garlic and cook for 1 minute. Set aside on paper towel for 10 minutes to cool. Strain tomatoes through a sieve, discarding juice, then combine with the herbs and season well. Spread the onions on the pastry and top with a layer of pepperoni, then the tomato and half the cheese. Top with the anchovies and olives. Scatter over remaining cheese and bake for 25 minutes until the cheese has melted. Serve with a green salad.

  • 28cm square ready-rolled sheet shortcrust pastry
  • 60ml (1/4 cup) olive oil
  • 400g (2-3 large) onions, thinly sliced
  • 2 garlic cloves, crushed
  • 2 x 400g cans diced tomatoes
  • 1 tablespoon chopped fresh oregano or basil
  • 50g sliced pepperoni, roughly chopped
  • 100g mozzarella cheese, grated
  • 50g anchovy fillets, drained
  • 12 small black olives
  • Green salad, to serve
