How to Make:

  1. Preheat oven to 200°C. Line a baking tray with baking paper.
  2. Cut the eggplant crossways into 1cm-thick slices. Place on the lined tray. Spray with olive oil spray.
  3. Top the eggplant slices with cheese and tomato. Bake for 10 mins or until the cheese melts and is golden brown.
