Recipe: Mini eggplant pizzas

How to Make:
- Preheat oven to 200°C. Line a baking tray with baking paper.
- Cut the eggplant crossways into 1cm-thick slices. Place on the lined tray. Spray with olive oil spray.
- Top the eggplant slices with cheese and tomato. Bake for 10 mins or until the cheese melts and is golden brown.
