How to Make:

  1. Use a serrated knife to trim the side of each sponge cake to form a square. Cut each cake into 4 squares, then cut each square in half horizontally. Divide the bases among serving plates.
  2. Use a balloon whisk to whisk the cream in a bowl until firm peaks form.
  3. Spread the lemon curd over the cut side of each cake base. Top with the cream and remaining cake.
  4. Sift the icing sugar into a small bowl. Add the passionfruit pulp and stir until well combined. Spread over the top of the cakes, allowing a little to run over the sides. Serve immediately.
