How to Make:

  1. Preheat oven to 180°C. Brush four 185ml (3/4 cup) ramekins/souffle dishes with the melted butter or margarine to grease. Place on a baking tray lined with non-stick baking paper.
  2. Sift together flour and cocoa into a small bowl. Beat butter and brown sugar in a medium mixing bowl with electric beaters until pale and creamy. Add the egg and beat until combined. Add the flour mixture and milk to the butter mixture and fold in with a large metal spoon until just combined. Spoon into the prepared dishes.
  3. For the sauce, combine brown sugar and cocoa and sprinkle evenly over pudding mixture. Carefully pour the boiling water over puddings, dividing evenly. Bake in preheated oven for 20 minutes or until just cooked and a skewer inserted into tops of puddings comes out clean. Stand for 3-4 minutes before serving.
