How to Make:

  1. Use a sharp knife to cut either side of the mango stone to remove the cheeks (making sure you cut close to the stone and therefore have an optimum amount of the mango flesh to use). Peel off the mango's skin and cut the flesh into long narrow strips. Place the mango, along with the chopped up banana, passionfruit and orange juice into a bowl and gently toss all ingredients together to combine.
  2. Use an electric beater to beat the ricotta, honey and cinnamon together until mixture is smooth. Finally beat in the thickened cream and mix all the ingredients together thoroughly.
  3. Divide the fruit salad among serving bowls. Top fruit with the cinnamon and ricotta cream and then serve immediately.

  • 4 passionfruit, pulp removed
  • 2 tablespoons orange or grapefruit juice
  • 200g fresh ricotta
  • 2 tablespoons honey
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup (80ml) thickened cream
