How to Make:

  1. Preheat oven to 180C/160C fan forced. Slice the damper rolls in half horizontally, then cut each half into 8 wedges. Place wedges in a single layer on 2 baking trays and spray lightly with oil. Bake for 10 minutes or until crisp and golden.
  2. Combine the avocado, lime juice, shallot and coriander in a bowl and season with salt. Transfer to a shallow serving bowl.
  3. Combine the corn kernels and corn relish in a separate bowl. Spoon over the avocado mixture. Sprinkle with pepitas and extra coriander leaves. Serve with lime wedges and the damper dippers.

  • 85g (1/4 cup) corn relish
  • 1 tablespoon pepitas
