How to Make:

  1. Preheat oven to 180C (160C fan forced), line a large baking tray with baking paper.
  2. Cream the butter and sugar together until pale and creamy. Add the egg and vanilla and beat until smooth. Sift the flour, baking powder and salt together and stir until combined. Add the cornflakes, choc chips and pecans and stir to combine.
  3. Roll tablespoons of the mixture and place on baking trays. Flatten the balls with a fork dipped in flour. Place in preheated oven and bake for 12-15 minutes or until pale golden.
  4. Remove from oven and cool on trays for 5 minutes before transferring to a wire rack to cool completely.

  • 1 egg, lightly beaten
  • 2 teaspoons vanilla extract
  • 150g (1 cup) gluten-free plain flour
  • 1 teaspoon gluten-free baking powder
  • Pinch of salt
  • 120g (2 cups) gluten-free corn flakes, lightly crushed
  • 75g (1/2 cup) gluten-free dark choc chips
  • 50g (1/2 cup) pecan nuts, roughly chopped
