How to Make:

  1. For mayonnaise, combine all ingredients in a small bowl. If mixture is too thick, thin with a little water.
  2. Place chicken mince, breadcrumbs, egg, onions and corn in a bowl. Season to taste with salt and pepper, then mix well to combine. Divide into 4 portions and shape each into a large, 3cm-high patty. Transfer to a plate.
  3. Heat a large non-stick frying pan over medium heat and cook bacon for 1 minute each side or until light golden. Drain on a paper towel-lined plate. Add oil to pan and heat over medium-high heat. Add chicken patties and cook for 5-7 minutes each side or until cooked through and well browned. To serve, divide lettuce among bun bases, then top with patties, bacon, a spoonful of curried apple mayonnaise and bun tops.

  • 500g minced chicken
  • 1 1/2 cups (155g) breadcrumbs, made from day-old bread
  • 1 egg, lightly beaten
  • 2 green onions, finely chopped
  • 125g can corn kernels, drained
  • 4 rindless rashers bacon
  • 2 tablespoons olive oil
  • 100g mixed baby lettuce
  • 4 hamburger buns, halved, toasted
  • Curried apple mayonnaise:
  • 1 small red apple, cored, cut into 1cm dice
  • 1/3 cup egg mayonnaise
  • 1 teaspoon mild curry paste
