How to Make:

  1. Warm the duck following the packet directions. Shred the duck meat, discarding the skin and bones. Place in a bowl with the vinegar, maple syrup, cinnamon and garlic. Mix to combine. Season well.
  2. To make the slaw, toss the apple, fennel, carrot, cabbage, shallot and dressing in a bowl.
  3. Fill the bread rolls with slaw and top with duck and coriander. Serve with extra coleslaw dressing.

  • 1 teaspoon white vinegar
  • 2 teaspoons maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1 small garlic clove, crushed
  • 12 small brioche hotdog rolls, halved, or small dinner rolls, split
  • Fresh coriander sprigs, to serve
  • Coleslaw dressing, extra, to serve

  • 1 small red apple, cored, cut into matchsticks
  • 1 baby fennel bulb, trimmed, very thinly sliced
  • 50g bought shredded carrot
  • 1/4 small green cabbage, finely shredded
  • 2 green shallots, thinly sliced
  • 2 tablespoons coleslaw dressing
