How to Make:

  1. Combine the miso and 8 cups (2L) water in a large saucepan over high heat. Bring to the boil.
  2. Reduce heat to medium. Add the ramen noodles and mushroom and cook, stirring occasionally, for 5-7 mins or until the noodles are tender.
  3. Ladle the noodle mixture evenly among serving bowls. Top with the tofu and sliced spring onion. Serve immediately.
