How to Make:

  1. Heat the oil in a large frying pan over medium heat. Add the onion and cook, stirring, for 2-3 minutes or until just softened. Add carrot, zucchini and sweet potato. Stir for 2-3 minutes or until just softened. Add spice mix and chilli. Cook, stirring, for 1 minute or until aromatic. Stir in lime juice. Remove from heat.
  2. Divide lettuce among bun bases. Top with the vegetable mixture, cheese and shallot. Serve with pickled cucumber, aioli or sour cream, and lime halves.
