Recipe: 5-a-day vegie sliders

How to Make:
- Heat the oil in a large frying pan over medium heat. Add the onion and cook, stirring, for 2-3 minutes or until just softened. Add carrot, zucchini and sweet potato. Stir for 2-3 minutes or until just softened. Add spice mix and chilli. Cook, stirring, for 1 minute or until aromatic. Stir in lime juice. Remove from heat.
- Divide lettuce among bun bases. Top with the vegetable mixture, cheese and shallot. Serve with pickled cucumber, aioli or sour cream, and lime halves.

- 1/4 -1/2 teaspoon dried chilli flakes, to taste
- 1 tablespoon fresh lime juice
- Iceberg lettuce leaves, to serve
- 8 small slider buns, halved
- 40g (1/2 cup) grated cheddar
- 2 green shallots, thinly sliced lengthways
- Sliced pickled cucumbers, to serve
- Aioli or sour cream, to serve
- Lime halves, to serve
