How to Make:

  1. Heat rice following packet directions. Fluff with a fork.
  2. Meanwhile, trim 6cm off base of each lettuce leaf. Spread leaves with sour cream. Top with rice, cheese, corn, avocado and coriander. Fold over base first, then fold in sides, leaving tops exposed. Secure with toothpicks. Serve with lime wedges.
