How to Make:

  1. Place maple syrup, 500ml (2 cups) water, vanilla bean, cinnamon, lemon zest and lemon juice in a medium saucepan over medium heat. Bring to the boil. Reduce heat to medium-low. Add pears. Place a round piece of baking paper over the pears. Cover the saucepan and cook for 20 mins or until the pears are tender. Set aside until cool.
  2. Meanwhile, combine mascarpone, icing sugar and cinnamon in a bowl.
  3. Remove pears from the syrup and place in serving bowls. Place syrup over medium heat. Simmer for 10-15 mins or until reduced and thickened slightly. Discard vanilla bean, cinnamon stick and lemon zest. Pour syrup over pears and serve with cinnamon mascarpone.
