Recipe: Poached maple pears with cinnamon mascarpone

How to Make:
- Place maple syrup, 500ml (2 cups) water, vanilla bean, cinnamon, lemon zest and lemon juice in a medium saucepan over medium heat. Bring to the boil. Reduce heat to medium-low. Add pears. Place a round piece of baking paper over the pears. Cover the saucepan and cook for 20 mins or until the pears are tender. Set aside until cool.
- Meanwhile, combine mascarpone, icing sugar and cinnamon in a bowl.
- Remove pears from the syrup and place in serving bowls. Place syrup over medium heat. Simmer for 10-15 mins or until reduced and thickened slightly. Discard vanilla bean, cinnamon stick and lemon zest. Pour syrup over pears and serve with cinnamon mascarpone.
